The weather is nature’s built-in conservation tool which helps to protect the stocks and the fishermen. This means that Cornish shellfish at its best is only available from March to November.

The shell fisheries around Cornwall’s coast are seasonal, fished by the small, inshore boats, usually from early spring until late in the autumn.

At the end of each season as the Cornish coast is battered by winter storms, most fishermen bring their pots in rather than risk them being damaged by rough seas. They spend the next few months repairing them and getting their fishing gear ready for the next season. They start setting the pots in the early spring, usually around the end of March, when the sun comes out. Tangle nets for spider crab go back out in April as the Deadliest Catch makes its way back to the Cornish coast.
